Sheet Pancakes

Looking for a simple breakfast recipe to feed a crowd? Sheet pancakes are all the rage right now! Not only can they be cooked all at once without flipping a single one, the combinations of fillings and toppings are absolutely endless so they can be customized to any group’s liking. Use pancake mix or the recipe below. Either way—they will turn out fabulous!

Ingredients:

· 2 ½ cups all-purpose flour

· 3 tablespoon baking powder

· ⅓ cup sugar

· ½ teaspoon salt

· 2 ½ cups milk

· 2 eggs

· ½ cup melted butter (divided)

· 2 teaspoon vanilla extract

Make it:

1.     Preheat the oven to 425F. Brush a 17- x 11-inch baking sheet with 2 tbsp of the melted butter.

2.     Whisk the flour, baking powder, sugar, and salt in a large bowl. In a separate bowl, whisk the milk, eggs, and the remaining melted butter together. Pour the wet ingredients into the dry ingredients and stir just until moistened.

3.     Pour the batter into the prepared baking sheet and even out the top with a spatula. Top with your favorite toppings, such as berries, chocolate chips, cinnamon and sugar, or whatever you have on hand. Transfer the sheet pan to the oven and bake for 12 to 15 minutes, or until the pancake is set and cooked through and golden brown on top.

4.     Remove the pancake from the oven and let it rest for 1 to 2 minutes before slicing and serving. Serve with additional fruits, whipped cream, and maple syrup.
